One-pot Roasted Pork Chops


What an easy-peasy , yet surprisingly delicious dish ...that's all I wanna say about it !

Banana & Coconut Muffins


I've failed to make a simple banana pound cake recently and even worse that it happened not only once but three time in a row!!! It's such a nightmare, especially when I didn't really know what's the problem or what to blame!  Consequently, I felt like doing something to make myself feel better which I ended up with this muffin..at least it's something with banana !!

The original recipe is made in a loaf form which requires a long baking time but I didn't have enough time to do so, I then instead made them in muffin form !

Malaysian Kapitan Chicken Curry


Speaking of curry, I love any kind of curry but I personally prefer Asian style to Indian ones cuz I think all Asian spices & herbs are more flavourful or maybe I've been used to them more than those Indian or Western spices & herbs !

This curry firstly caught my attention by its look posted on foodgawker and after reading through the post and recipe..it reminded me of Ayum betutu, one of the family's favorite dishes.. but this is in a curry form with more sauce which I was easily convinced that it could become another dish we fancy..and I was so right ! We loved the dish and will definitely make it again and again !

Tuna Muffins

I like canned tuna but strangely, I don't fancy a fresh one and don't cook/ eat much of canned tuna either. This tuna muffin totally caught my eyes and attention with its look and the way it's made which is quite different from other recipes I've found..

With all ingredients in hand, I made it straight away after reading through the whole recipe and as expected,  the outcome didn't let me down !

White Chocolate, Cranberry & Macadamia Cookies

My daughter had a playdate yesterday and she asked me the day before to make something for her and her friend as a snack like usual..how could I say no ?? ..so here come the cookies !

Cinnamon Rolled Biscuits

While waiting for my bread dough to rise, I luckily found this interesting biscuit on the same site I've found the bread and given a cinnamon roll is the family's favorite..no doubt that it would be worth my time and try ! 

The biscuit is easy peasy to make and doesn't take that long to be done which is perfect for killing time indeed in my case!

The recipe could be found here. ( Note : I reduced amount of the filling and consequently found out that the biscuits were only slightly sweet, to fix the problem, I then made an icing topping and swirled it over the biscuits which was very helpful ! )






















Garlic & Herbs Pot-baked Bread

I've got a few of leftover dishes kept in the fridge and freezer waiting to be eaten...so I decided not to cook anything this weekend and have tried to clear them away as soon as possible before I couldn't resist cooking new things that have also been waiting to be given a try!

Eventhough I have managed to stop myself from cooking at the moment but I simply found some excuses to continue playing with something in the kitchen.:) This bread was intendedly made to serve along with the leftover of smoked haddock & jerusalem artichoke gartin (sorry, neither post or photo are available to be seen ! )

I've firstly found the original a while ago on PWC ( The Pioneer Woman Cooks ) and recently seen it again from Joy the Baker..this time I didn't make a mistake to leave it ignored for a long timeee!

Here is my version :

2 cups bread flour
1 tsp active dry yeast
3/4 scant cup warm water
2 ounces butter, melted
a spoonful of thyme & rosemary leaves
3 cloves garlic, crushed
1 tsp salt
1 tbsp sugar

White Chocolate & Macadamia Brownie Cookies

I baked these banana cookies the other day but unfortunately, my daughter decided not only not to like it (after having  few bites of it ) but also complained that I hadn't baked anything she'd like for ages which I silently disagreed cuz I just made her favorite garlic bread the day before!

Anyway, to avoid the worse situation, I chose to make her feel right and happy by promising  her that I'd make something she likes the next day which magically calmed her down and walked away with a broad smile.. and big thank to google for finding me these cookies !

Banana Oatmeal and Chocolate Chips Cookies

I got a couple of too-ripe-to-eat bananas sitting in the fruit bowl waiting for me to deal with  and there were basicly three choices I could opt for...firstly, making something out of it right away..secondly, keep it in the fridge/freezer for the time being or the last is to throw them away!

Given an ugly look of frozen banana(s) that I can't really stand and also a guilty feeling of wasting things, so I easily opted to do for the first choice. Consequently, I had to think about what to do with it which finally, this cookie was the winner !

Here is what I've done ( adapted from here)..

Ingredients:

1-1/2 cup2 all-purpose flour
1 /2 teaspoon table salt
1/2 teaspoon baking soda
3/4 cup unsalted butter, at room temperature
1/2 rounded cup of light brown sugar and caster sugar
1 large egg
1 1/2 teaspoons vanilla extract
3/4 cup ripe banana, mashed
1 cup old fashioned rolled oats
8 ounces semisweet chocolate chips
1/2 cup walnuts, toasted & coarsely chopped           

Method :

1. Preheat oven to 375 degrees F. Line baking sheets with parchment paper (or silpat), or spray with nonstick spray.
2. Whisk together flours, salt and baking soda in a medium bowl.
3. In a large bowl, beat butter and sugars with an electric hand mixer; mix on medium speed until pale and fluffy. Reduce speed to low and add egg & vanilla; mix until combined. Mix in banana. Add flour mixture; mix just until combined. Stir in oats, chocolate chips and walnuts.
4. Drop dough by heaping Tablespoonful onto prepared baking sheets (or use a cookie scoop), spacing about 2 inches apart. Bake cookies until golden brown and just set, 12 to 13 minutes. Let cool on sheets on wire racks 5 minutes. Transfer cookies to wire racks; let cool completely.

Mexican Beef Chilli

Another recipe I've found in goodfood magazine at the right time when I was about to run out of idea what to cook !

In my opinion, it's not only much much more interesing but also definitely more delicious than a boring chilli con carne ! Give it a try and you'd realize how darn right I am..:)

Shrimp Creole

My husband is not a picky eater at all but he wouldn't like to eat the same dish or kind of meat/seafood for two meals in a row. My job is basicly to remind and inform him what he ate for the last meal and what he's gonna have for the next one which is not difficult compared to what dish I'd think about to cook/serve for him!

This shrimp creole is a new dish for me..I neither ate nor cooked it before, so I was so keen to give it a try..:) Without a clue, it's fun to guess how it's supposed to taste..not sure if mine is like an authentic one but turned out that noone seemed to care and they enjoyed eating it ..And that matters the most for me!!
