Salted Butter Tart



I'd got some salted butter left in the fridge that I wanted to get rid of for a long while but couldn't come up with any idea what to use it for until recently when I came accross this tart on Leite's Culinaria that happens to call for salted butter exactly the same amount I'd got !!

Honestly, I was not so sure if I made the salted butter filling correctly as it stated in the recipe but my concern was gone when two of my VIP testers ( of course, it couldn't be anyone else but my hubby and daughter !) gave me thumps up after their first bites..:) What a relief !

Rich Fruit Cake


I've made this fruit cake a few times, yet didn't manage to have it posted on my blog..until now , when I made again for friends last weekend and didn't forget to take the photos before the cake is gone !

I've found the recipe a few years ago..gave it a try and have fallen in love with the result ever since ! The cake is rich as it called..what makes it the winner for me is the huge amount of alcohols called for in the recipe..:)

Avalanche Bark Bars


Last weekend I had a BBQ by the beach with a few friends to entertain our kids ( and of course, ourselves ! ) . Typically, I made and brought along sweet for both adults and kids which these barks were for kids and no doubt, they were really a big hit cuz when it comes to a mix of yummy things, then no kid or even adult can fail to love it !

The recipe could be found here. ( Note : I used 8*8 inch tin, 10 oz. of white chocolate bars, used normal size chocolate chips & chunky peanut butter and added some salt to the mixture )

Bluecheese Bread Sticks


I haven't played with yeast as often as I'd like..luckily, this bread stick came at the right time when I felt like making bread and coincidently, there are few ingredients need to be used before they pass the expiry date..so it's kind of win-win situation !

The sticks are not crispy type..instead it's more like pizza sticks that are soft and a bit chewy. Surprisingly, it turned out to be a hit for my daughter..:)  

The recipe :

200g bread flour
125ml warm milk
1tsp instant yeast
50g bluecheese ( I used gorgonzola )
1tbsp honey
1/2 scant tsp salt
1/2 lemon zest
30g butter,softened  
1egg + a tbsp milk for glazing

Method :

1. Combine all ingredients (except glazing ) into mixing bowl and use a dough kneading head to form a soft dough and with a low speed, keep kneading the dough until smooth and elastic about 20-25 minutes.


2. Let the dough rest for an hour or till double in size then punch & knead dough to release air.

3. Place the dough onto a slightly floured working table and roll it out flat about 11x8" & cut into thin & short sticks. Place sticks on lined baking tray and leave the sticks to rest for about 30-40 mins then brush on egg glaze.

4. Bake in the preheated oven 195-200'C for about 10-12 mins or till brown.
