Marmalade Creamchesse & White Chocolate Bars

I never doubt when people say time flies because I feel or experience the same way ! It's summer again and we are going to be away during the school break as usual...:) Guess this would be the last post before I resume from the break ! Have a nice summer time and see you when my holiday ends !

The recipe

Ingredients :


For the base


190g Digestive biscuits ( Graham crackers )
90g melted butter

For the creamcheese filling


A pack (250g) of cream cheese
5tbsp Orange Marmalade
1 xl egg
1/2tsp Cointreau
1/4tsp Orange extract

For the topping


120g White Chocolate
1tsp butter
3-4tbsp whipping cream
Orange zest from 1 orange

Method :

1. Heat oven to 350°F.  Crumble the digestives in a food processor, add the melted butter and mix well. Place in a greased and lined with parchment paper 20cm square pan and pat down tightly with the back of a spoon. Chill while preparing the filling.

2.  In a mixing bowl, beat the cream cheese, marmalade, extract and liqueur with electric mixer on medium-high speed until well blended. Add the egg and beat until well blended and creamy. Spread evenly onto the crust.  Bake 30 minutes or until the center is set. Cool for 1/2 hour.


3. In small microwavable bowl, microwave the whipping cream, butter and white chocolate, stir until the mixture are melted and smooth. Add the zest and mix well. Spread the mixture evenly over bars. Refrigerate about 1 1/2 hours or until chilled and firm. Slice into bars and serve !

Chocolate & Butterscotch Chips Cookie Dough Bars

Although I always taste a cookie dough to see how nice it is before baking in the oven but I'd never tried eating it raw properly ! Honestly speaking, I felt weird to eat it that way but couldn't help but confess that it tastes sooo good :)

After seeing this post , I then was so convinced and told myself it's time to experience another new thing ! The original recipe is called 'chocolate chip cookie dough billionaire bars' which has caramel and chocolate layers as a-must ingredients for general billionaire bars... Due to my laziness and wanted to get it done quickly , I decided to leave a caramel layer out and added some butterscotch chips into the dough ,hence, I changed the name and called it as seen above !

I had a few friends and kids come over for dinner and I took ths chance to let them try the bars and surprisingly got a really good feedback..:) Now it's no longer feel peculiar to me to eat such a thing !

Braised Pork Belly with BBQ Sauce

I've got the leftover BBQ sauce from cooking this chicken dish few weeks ago. And as I've previously planned and said that I would make something else with it and now it's time to rock!

This time I chose pork belly with young bones , my own favorite part..the way I cook was similar to the chicken that the pieces of meat were browned lightly first then added water ( instead of broth ) to cover the meat..let them cook until boiling then added the sauce and stirred to well-blended. Let it boil again and simmer with the lid on for 1 hour and without the lid for another hour..adjusted the taste with some seasoning powder and brown sugar..then the dish done!!

As for the verdict, I definitely fell in love with the dish...and honestly, I like it more than the chicken and that's just because I personally prefer pork belly to a healthier chicken ..:) Two thumps up to the wonderful sauce that does its job excellently !!    








































Maple Syrup Pie

Is it too ridiculous to confess that the only reason why I made this sort-of-Canadian pie is because my daughter's school is Canadian ! lol...I know it sounds crazy but I have to shyly admit that it's true..:)


This pie doesn't look as attractive as its taste but that's not the issue for me...My only problem is a difficulty to cut it into piece without breaking a crust ! It's best eaten when it's chilled..

Aztec Pie

I'd been thinking of a few things to cook for dinner on Saturday and finally downsized to only 2 dishes which one is Indian fish curry and the other is this mexican chicken pie. Normally I'd let my husband choose but this time, I made a decision on behalf of him and went ahead to get all ingredients sorted..:) Lucky me thatI picked the right choice cuz he came home on Friday night and told me that he just had curries for a big lunch !

Giving knowing nothing about the dish before , I then didn't have guts to change or modify anything and simply followed the recipe a whole lot and added some corn as suggested..
