Outrageous Oreo Brownies

I do like brownies and enjoy eating a delicious one ! I couldn't help but try whenever I find or come accross a recipe that looks gorgeous to me..and undoubtedly, this brownie is the case!

I've seen (at least) three people (Joe , Helene and EMD), who certainly are reliable, posted about these brownies of Ina Garten..All of their brownies look fabulous and simply made me thrilled..so how could I resist such a delicious thing like this ?? Fat chance !!

Anyway, I made only a third recipe and used 8*8" tin. I also adjusted the recipe a bit to fit my taste bud..

Here is my version ( adapted from here )

160 g butter
100 g 80% cocoa dark chocolate, chopped
100 g 75% cocoa dark chocolate, chopped
2 large eggs
1 scant tablespoon instant coffee granules
2 tsp vanilla
75 g caster sugar
1/3 cup ( 45 g) plus 1 rounded tbsp plain flour
1 tsp baking powder
1/4 rounded tsp salt
a 150g pack of Oreo cookies (minus 3 cookies)

Arrange a rack in the middle of the oven and preheat to 350°. Lightly grease and line 8" square baking tin with parchment paper.

In a heatproof medium bowl set over a saucepan of simmering water, heat butter and the chocolates until melted and smooth. Allow to cool slightly.

In a large bowl, whisk eggs, coffee, vanilla and sugar. Blend chocolate mixture into egg mixture; cool to room temperature.

In a medium bowl, sift together 1/3 cup flour, baking powder and salt. Add flour mixture to chocolate mixture. In a small bowl, stir Oreos and remaining flour. Add Oreo mixture to chocolate mixture. Pour batter into baking tin and smooth top with a rubber spatula.

Bake 22-25 minutes or until a toothpick inserted 3 inches from center comes out clean; do not overbake. Allow to cool. Refrigerate, tightly wrapped, until cold; cut into squares.
