Carrot Cake Oatmeal Cookies
I've got a big bottle of coconut oil from a friend of mine and it's been sitting on the counter for a while without being used, thus when I saw this cookie's recipe calling for coconut oil, I decided to make them without a second thought !

Islamic Beef Stew
Since I got an application for Thai TV programs on my phone, I've had lots of chance to catch and follow up with some programs / series I like and one of them is about food which I've found this stew from !
There is no recipe provided but they showed you what the ingredients are and how to make the dish. Though, it's quite simple to follow but you need to estimate and make it right for your own taste.

Blueberry Shortbread Mini Tarts
Recently, I couldn't help but grab few packs of blueberry from shelves in supermarket everytime I go shopping due to its low price / good deals. Luckily, I finally realized that I've got too many of them stocked in my fridge and had to use them up before it's too late !
These scrumptious mini tarts came at the right time !!

Beetroot Soup

Muamba de Galinha ( Anglolan Chicken Stew )
I gave my husband two choices to choose which one he'd like between chicken and prawn and apparently, this stew was a consequence of his decision!
I love cooking new things..every time I find/come across something I've never heard of , I can't just wait to give them a try..no exception for this Anglolan chicken stew..:)

Farro with Sardines & Kale Salad
I came across this farro salad the other day and realized that it's been awhile since the last time I cooked with farro ! So here it comes..
I wanted to make the original recipe to begin with but I somehow changed my mind and ended up with my own version using similar ingredients and adding sardines as it's my hubby's favorite..
The recipe :
Ingredients
1½ tbsp olive oil ( from sardines )
2 garlic cloves, minced
6 cherry tomatoes, halved lengthwise
1/2 cup farro
1 cube vegetable stock
1 bunch kale, stems removed and leaves coarsely chopped
1 tbsp apple cider vinegar + few drops honey
1 tsp kosher salt, plus more to taste
some feta cheese, crumbled
Instructions :
Place the farro & the veg cube in a medium saucepan and cover with water, leaving 2 inches of water above the farro. Bring to boil, cover and reduce the heat to low and simmer for 30 minutes, or until chewy. Drain and set aside.
Heat oil in frying pan, add the garlic and sautee until lightly brown then add sardines and break them up a bit. Throw in kale and tomato and stir until the kale wilted. Put the mixture into a mixing bowl.
Add the farro into the bowl and mix everything throughly. Splash the cider & honey. Adjust seasonings. Then sprinkle with feta. Serve !

Healthy Mixed Berries Streusel Bars
I got a lot of berries from fruit baskets given to my husband while he was in the hospital for his knee operation. So, it's a right time to see these bars and use up the berries before they go off !
With this recipe, I have learnt a new thing which is how to make homemade almond butter..it's surprisingly easy and could be done in a few minutes. I think the bars are healthy due to no real butter or flour called for...more importantly, it's yummy and my victims are happy with it !

Liberian Chicken Gravy with Check Rice
My husband had the operation on his left knee last week and it takes a few weeks to recover..so it means he won't be able to attend any event / function for a while and that I will have chance to try new recipes while he's at home!
Started off with this stew & rice, even though there are many different recipes about it but I chose this one cuz I like the way both of them cooked..easy, yet delicious!

Orange Yogurt Souffle' cake
One odd thing about myself is that I can easily eat the same food for many days in a row or in fact, a long period of time but when it comes to cooking or baking , unlike eating habit , I am, instead, fond of trying varieties of things / recipes and I rarely repeat unless they are the family's favorite foods !
I've made yogurt cake before but not the same type as this souffle cake..once I read through the post about it , I knew it couldn't be missed from my baking lists!

Bangladesh Beef Tehari
I normally don't cook on Sunday after spending most of Saturday in the kitchen. So, I always serve my husband a leftover food kept in the freezer for dinner and we'd go out for lunch after a walk with our family's friends. However, I've found this beef tehari on foodgawker and it made me break my routine !

Lighter Cassoulet
I sometimes struggle to come up with an idea of what to cook for Saturday dinner, a meal of the week that I have a lot of time to prepare and cook and when it happens , one of the best sources I rely on is bbcgoodfood ! This cassoulet is my choice since it's not often that I cook French dish and the recipe is not too complicated what you need is time to prepare and cook which is not the problem in my case..
