Triple Chocolate Mousse Cake


I typically was on a mission of making a bd cake for my husband and this year, when I asked him what kind of cake he'd want , he then promptly said that anything about chocolate would be great which honestly, was not that helpful to me..anyway, this triple chocolate mousse cake was the winner at the end !

As for the outcome, the only weak point of this cake ( in my opinion !) is the middle layer which seemed too dense and not that smooth as I'd like..anyway, I got a lots of favourable comments from people ( at my husband's office ) who had a chance to try a piece of the cake..:)

Browned Butter Butterscotch Shortbreads


My family's favorite shortbread is maple shortbread and my daughter always asks for it when she feels like eating shortbread. However, I saw this browned butter shortbread on foodgawker and I was tempted by its look which didn't make any effort to convince me to give it a try !

Apple Granola Cupcakes


When I firstly saw this cake posted , I knew for sure that I wouldn't miss giving it a try..and now it's the time!

The original recipe calls for a square baking tin but due to a lack of time , I instead made it into cupcake form  which saved me more than half of baking time, yet I reckon the outcome is absolutely not less delicious than the original !

Salted Butter Tart



I'd got some salted butter left in the fridge that I wanted to get rid of for a long while but couldn't come up with any idea what to use it for until recently when I came accross this tart on Leite's Culinaria that happens to call for salted butter exactly the same amount I'd got !!

Honestly, I was not so sure if I made the salted butter filling correctly as it stated in the recipe but my concern was gone when two of my VIP testers ( of course, it couldn't be anyone else but my hubby and daughter !) gave me thumps up after their first bites..:) What a relief !

Rich Fruit Cake


I've made this fruit cake a few times, yet didn't manage to have it posted on my blog..until now , when I made again for friends last weekend and didn't forget to take the photos before the cake is gone !

I've found the recipe a few years ago..gave it a try and have fallen in love with the result ever since ! The cake is rich as it called..what makes it the winner for me is the huge amount of alcohols called for in the recipe..:)

Avalanche Bark Bars


Last weekend I had a BBQ by the beach with a few friends to entertain our kids ( and of course, ourselves ! ) . Typically, I made and brought along sweet for both adults and kids which these barks were for kids and no doubt, they were really a big hit cuz when it comes to a mix of yummy things, then no kid or even adult can fail to love it !

Bluecheese Bread Sticks


I haven't played with yeast as often as I'd like..luckily, this bread stick came at the right time when I felt like making bread and coincidently, there are few ingredients need to be used before they pass the expiry date..so it's kind of win-win situation !

The sticks are not crispy type..instead it's more like pizza sticks that are soft and a bit chewy. Surprisingly, it turned out to be a hit for my daughter..:)  

The recipe :

200g bread flour
125ml warm milk
1tsp instant yeast
50g bluecheese ( I used gorgonzola )
1tbsp honey
1/2 scant tsp salt
1/2 lemon zest
30g butter,softened  
1egg + a tbsp milk for glazing

Method :

1. Combine all ingredients (except glazing ) into mixing bowl and use a dough kneading head to form a soft dough and with a low speed, keep kneading the dough until smooth and elastic about 20-25 minutes.


2. Let the dough rest for an hour or till double in size then punch & knead dough to release air.

3. Place the dough onto a slightly floured working table and roll it out flat about 11x8" & cut into thin & short sticks. Place sticks on lined baking tray and leave the sticks to rest for about 30-40 mins then brush on egg glaze.

4. Bake in the preheated oven 195-200'C for about 10-12 mins or till brown.

Moravian Sugar Cake


The Moravians settled in North America from what is now The Czech Republic and Slovakia by way of Bethlehem, Pennsylvania in the mid-ish 1700s. So, what is Moravian Sugar Cake, exactly?

It is a sweet dough cake that is enhanced with butter, sugar, and cinnamon. It is traditionaly served as an Easter morning breakfast treat, but is an excellent coffee cake year round. This Moravian tradition is extremely yummy!

When it comes to baking, I always find a reason ( which sometimes is odd one! ) to give something a try! And this coffe cake is the case...I decided to go for it just because that the recipe calls for mashed potato..nothing to do with the history or the fact of what the cake really is!
