These savoury muffins are very easy to make and I think they are versatile..breakfast..brunch..supper..snack..starter..side dish..main with some salad..ideal for all ! what else could make you more convinced to give it a try?
I couldn't remember how I managed to find the original recipe which is from here..although it's typed in Italian but luckily,the writer was kind enough to post it in English as well, so thank you..thank you (PIP)!
The recipe ( adapted from here )
1 cup self-rising flour
50 g butter, melted
1/4 cup milk
1/4 tsp salt
1 tsp sugar
3/4 tsp baking powder
1 egg
2 tbsp grated parmesan
1/2 leek, thinly sliced
50 g diced ham
50 g brie, chopped
olive oil
black pepper to taste
cayenne pepper to taste
Method :
1. Preheat the oven to 180c. Grease the muffin tin with oil. Fry the leek in a pan with olive oil until brown and softened. Mix together the flour, salt, sugar, parmesan and baking powder in a mixing bowl. In another bowl whisk butter with eggs and milk. Pour in the flour mixture and stir. Add leek, brie, ham and peppers. Fill in the prepared muffin tin and bake for about 25-30 minutes until the tops are golden brown.

Koy, those muffins look yummy. I've never had a savoury muffin before, unless if you consider corn muffins to be savoury and wasn't a fan of the grit..hahah. I just love your additions of ham, brie, paramesan and leek.

This looks AMAZING! I caught the photo on Tastespotting and i love the recipe. I work with Alouette cheese and our creamy baby brie would be great with this recipe. This gets a digg and a stumble from me! Thanks!
Nice recipe... Will have to try it. I have a nice goats cheese and spinach muffin on my blog which is great too. Will let you know how they turn out.
