I've got some leftover cream cheese and blueberry from previous baking..instead of making cake or muffin , I decided to use the duo play in cookie form for a change and they worked together so well ! However, I jazzed the cookie up with white chocolate chips which also did its job beautifully...
I searched for a recipe and the one I've chosen is pretty easy that totally fitted my desire !
The recipe ( slightly adapted from here )
1/2 C butter
1/2 C cream cheese
1/2 scant cup light brown sugar and caster sugar
zest of a lemon
1 tsp vanilla extract
1 egg
1/2 tsp baking soda
1/4 rounded tsp salt
1 1/2 C plain flour
1 C blueberries (fresh)
1/2 cup white chocolate chips
Preheat the oven to 350. In a medium bowl, whisk together the flour, baking soda and salt. Set aside.
Cream the butter, cream cheese and sugar until it is fluffy and smooth. Add the lemon zest, vanilla and egg , then beat until well blended. Gradually incorporate the dry into the cream cheese mixture. Once all the dry is incorporated, fold the berries and white choc chips into the dough.
Scoop out the dough and place each scoop on an un-greased cookie sheet. Bake for 11-13 minutes.
