Bengali Lamb Dry Curry
I like cooking and eating all kinds of curries but Indian ones seem to be the winner..I've fallen in love with spices that make a magic to the outcomes which never fail to please my testers !
When I spotted the photo of this curry, it immediately caught my attention and made me go straight to view the post...The original dish is made using mutton but unfortunately, it's not easy to find the meat in HK or at least from where I normally shop..so instead of giving up, I chose lamb as a substitute !
The dish is recommended to serve with what it's called sweet pea pulao which calls for some dried fruits and cashew nut. Given my husband and daughter are not big fan of those, so I omitted them and remained the rest ingredients and was happy to call it ' Pea Pulao ' !

Chocolate Chip & Pecan Cookie Brittles
Most of cookies I've made are rather soft & chewy types than crispy ones which sometimes are not a big hit among kids who are crazy for Chips Ahoy cookies type!
So this brittle seems to be a good solution to make my homemade cookie to become a big hit!! At least it's been proven by my loving daughter !!
The recipe could be found here. ( Note : I made only half recipe and reduced sugar to 1/3 cup )

Basic Buttermilk Scones
Scone is one of baked goods that seems easy to make but in fact, it's not that easy to make things right to get a good one !
I make scones once in a while using different recipes when I feel like baking but can't think of anything ..not only it's simple and fast to get everything done but it is also one of my family's favorites!
I made one batch last weekend but the outcome didn't meet my expectation so I decided to do it again but to avoid being disappointed , I opted for the recipe that I'm sure it would never let me down!!
The recipe could be found here. ( I served them with clotted cream and raspberry jam )

Prawn and Spinach Coconut Curry
I was looking for something easy to cook as a quick weekday dinner and finally caught up with this curry ! The original recipe uses lobster and chard as a main duo but I decided to go for something cheaper and easier to find in a local market which are prawn & spinach!
The recipe could be found here.

Oreo Dark Chocolate Tart
We got invited for dinner from a friend of mine with a short notice and it's typically that I can't show up without my baked good along, so this tart came at the right time to rescue !
The recipe could be found here ( Note : I baked it in 9"round tart tin and used 22 oreos without fillings with 50 g of melted butter, also baked the base for 10 mins at 350f and used mini oreos & grated white choc to decorate and top the chocolate fillings )
Stir-fried Zucchini with Corn & Bacon
Given a long 5 days Easter break without my helper while my husband has still been on clutches with one leg useable, I, thus, avoided cooking and baking anything that requires a lot of preparing and of course, washing up..so I used up all leftover food in the freezer and lucky enough to end up cooking only one meal during a whole period !
I chose to cook African style roasted chicken which is not complicated and doesn't need much effort to cook the dish , yet the outcome was fantastic ! Unfortunately, I totally forgot to take any photo of it until only bones left on the plate..but I managed to take some photos of the side dish that I made to serve along with the chicken that was also fabulous...and here it is!!
The recipe could be found here ( Note : I added crispy crumbled bacon on top to make it more interesting and attractive for my daughter )

There is one food blogging event called TWD ( Tuesday with Dorie ) which I've been following but not formally participating. What I like to do is to check on the event and see what to be chosen and baked for the week, then without a committment and pressure, I'd make the same as they do whenever I find something interesting and catch my attention !
These bars are one of them that is very simple to make and easy to please people especially kids..shortbread base topped with chocolate and caramelised rice crispy..who can say no to it ??
The recipe could be found here.
