White Chocolate and Oreo Mousse Pie

This mousse pie (or some people call it cake) has been popular among Thai food bloggers/communities which I'm not quite sure who originally posted about it..By the time I found the recipe, it already became well-known and had been made/posted by numbers of people that most of them didn't fail to feel pleased with their outcomes ! Hence, I assumed that it wouldn't make me disappointed when it's my turn..

Unfortunately, my first try was not smooth like I expected..I whipped the cream far too much and it became curdled at the last stage after I mixed all things up together. Consequently, the mousse had a horrible texture ,yet its taste was beautiful ! I didn't wait that long before I had the second go and this time it came out just perfect !

I made it a couple more times before realizing that I'd not posted it on my own blog yet...so I took a chance, when I had nothing to make my oven occupied or to post, to get it published here right now just before I decide to try a new recipe !

I've got the recipe from this blog (created/written)by Khun Jum who is one of my Thai favorite and reliable cooks/bakers..

Recipe (translated from Thai)

For the crust:

150g pack of oreo cookies ,filling removed
6 tbsp (85g) unsalted butter, melted

For the filling:

1+1/4 cups milk
1 scant tbsp (7g) powdered gelatin
330 g white Chocolate ,chopped
2 cups whipping cream
150g pack of oreo cookies, filling removed and coarsely chopped

Method:

1. Make the crust,put the oreo in a zip-lock bag and finely crumble it using a rolling pin. Transfer the crumb into a bowl and pour the melted butter over, mix until blended. Pour the crust mixture into an 8" springform tin ( or loose-based tin) and press them down evenly and tightly.Let it set in the fridge while making the filling.

2. Make the mousse filling, in a medium saucepan, add the milk and gelatin, stir and leave for a few minutes to let them absorb each other, then heat it gently on medium heat until the gelatin has dissolved. Remove the pan from the heat and add the white chocolate into the milk mixture, stir until the chocolate has melted and incorperated. Leave to cool at the room temperature, stirring from time to time, until the mixture reaches a sweetened condense milk-like texture.( To speed this stage up, you can either put it into the fridge or over a bowl of iced water )

3. In a mixing bowl, whip the cream to the soft peak,then pour the chocolate mixture into it, fold gently until everything blended. Stir in the oreo cookies. Take the curst out of the fridge and pour the mousse mixture over the crust evenly. Leave to set in the fridge (preferrably)overnight. Then gently unfold the pie and decorate as you wish before serving.

Note :
1. The pie/cake is sweet in itself without adding any sugar..if you are not a big fan of so sweet sweet/dessert, then you can reduce amount of white chocolate..
